Chef Mik's Organic Whole Wheat Bread


This is a great bread and super easy to make, back at the café we offered a variety of whole wheat breads, artisan whole wheat grain, whole wheat baguettes, whole wheat pan di mie, whole wheat sour dough, whole wheat sourdough with walnuts, and whole wheat sour dough with dried fruits, all of our ingredients were natural or organic however from time to time we would use powdered milk in part do to the fact it’s lighter which helps the bread rise, but at home I make my wheat bread mainly with kefir or buttermilk and honey, I also like to rotate my bread about half way through the baking process to help insure its bakes evenly, lastly to generate great steam using a pizza stone inserted in the oven and heated, after to you have placed the bread in just before you close the door pour some water onto the stone

Shopping List
Organic whole grain wheat flour
Organic bread flour
Buttermilk
Fresh or instant yeast
Honey
Filtered water
Salt

My Mad Method

Start by measuring 1.5 KL organic whole grain wheat flour








Add 1 L (1kl) very warm filtered water, mix together, and set aside for 1 hour







Meanwhile measure 5dl (500g) buttermilk, and 3 dl warm honey, add both to the mixer









Add the soaked wheat, and measure 700g bread flour, 3 TBSP instant yeast, 2 TBSP salt, mix on low or divide recipe in two and mix in batches





Place the dough in a greased mixing bowl, cover with kitchen towel or perforated plastic wrap







Proof for 1 hour or until it has risen about twice the size









Divide the dough into 6 equal loaves, proof 1 hour longer, bake in a 225c preheated oven, insert bowl of boiling water, reduce temp to 175c and bake for about 50 minutes, when ready it will sound hollow taped on bottom, shown here coated with rolled oats
