Chocolate Chip Muffins



Today I am baking some American style muffins not to be confused with their flatter more savory cousin the English muffin, they are more similar to cup cakes though tend to be less sweet.

This is a somewhat different way to bake muffins and employs butter as apposed to oil, back in the kitchen we use to sift together large quantities of our basic dry ingredients just to have on hand when ever needed, and would shift between methods when it came to the wet ingredients

Shopping List
Butter
Baker’s sugar
Brown sugar
Eggs
Vanilla extract
Kafir, yogurt, yogurt, sour cream or crème fraîche
Whole wheat pastry flour
Baking flour
Baking soda
Salt
Chocolate chips

My Mad Method

Ready to serve!













Cream together 115g butter together with 1 dl white bakers sugar, plus 1 TBSP brown sugar











 Add 1 egg, and mix to combine












Add 1 tsp vanilla

 










Add 3 dl buttermilk and 1 TBS either kafir cheese, yogurt, sour cream or crème fraîche 











Give a quick mix just to incorporate the ingredients
 










Add 6 dl whole wheat pastry flour, 2 tsp baking powder, 1/2 tsp baking Soda, 1/4-1/2 tsp salt sifted together, mix but be careful not to over, fold in 50g chocolate chips
 






 Scoop the batter into lined muffin tins and decorate as desired, bake for 15 - 20 minutes or until a tooth pick inserted in the center comes out clean, in a 200c preheated oven
