Oatmeal Cookies



I started making these cookies a few years back for a charity event and called them "Chef Mik's Ooey Gooey Rich and Chewy Oatmeal Cookies". This event gradually led to us baking them to order which in turn ultimately led to selling them in our café and corporate lunch gigs they are super simple to make and taste really good!

Now I use butterscotch and mixed dried fruit in my cookies but if you are a traditionalist by all means go with raisins and chocolate chips, I am a big nut fan so of course I am adding nuts to my cookies but this is by no means mandatory

A note about oat meal: make sure to purchase quick cooking rolled oats or else you are in for a long day filled with disappointment and heartbreak

Shopping List
Butter
Baker’s sugar
Brown or dark brown sugar
Eggs
Flour
Oats
Walnuts
Butterscotch chips
Dried cranberries
Dried cherries
Vanilla extract
Cinnamon
Nutmeg
Baking soda
Salt

My Mad Method

Ready to serve!! 












Cream together 120 g butter and 100 g’s each bakers sugar and dark brown sugar













Add one egg and 1 tsp vanilla extract














Sift together 2.5 dl unbleached flour, 1 TBSP cinnamon, ½ tsp nutmeg, ½ tsp baking soda, ¼ tsp salt and add that to the batter












Add 7.5 dl oat meal, 2 dl each: butterscotch chips and walnuts, 1 dl each: dried cranberries and dried cherries












Arrange the cookies on a sheet pan that has been lined with well greased parchment paper and bake for 12 to 15 minutes or until done in a 175c (350f) preheated oven
